What makes our Estate wines innately food-friendly? As per our ethos of winemaking according to old-world French methods, yielding wines where a middle-ground between weight, flavour and structure can co-exist, our wines are complex yet not overpowering, avoiding the classically modern-Australian trend of ‘overpowering’. A subtle elegance, with great length and complexity, make our wines perfect for accompanying food, and elevating it.

We do not follow formulaic pairings. Instead, we pursue harmony. Each wine in our Estate Range is composed with structure and soul - balanced, nuanced, and designed to engage in dialogue with food rather than dominate it. This is pairing as an art form - intuitive, expressive, and rooted in respect for both plate and palate.

 


Levantine Hill Estate Range: Signature Pairings

Estate Chardonnay 

Our Estate Chardonnay presents with golden luminosity and a refined savoury thread weaving through stone fruit, lemon pith, and layered oak. A full-bodied yet graceful wine with a creamy finish and textural acidity.

Pairing: Butter-poached lobster or seared scallops. The Chardonnay’s freshness lifts the richness of the dish, while its texture mirrors and enhances it. A generous yet composed conversation between plate and glass.

 

Estate Syrah 

Our Estate Syrah is a poised expression of Yarra Valley cool-climate winemaking - perfumed, supple, and savoury. Aromas of black cherry, violet, and cracked pepper are complemented by a finely textured palate of dark berries, spice, and subtle oak. Silky tannins and bright acidity provide structure and elegance.

Pairing: Chargrilled lamb shoulder with sumac and root vegetables. The wine’s spice and lifted aromatics enhance the earthy depth of the dish, resulting in a pairing that is textural, fragrant, and quietly complex.

 

Estate Cabernet Sauvignon

Our Estate Cabernet Sauvignon is a wine of classic structure and refined power. Aromas of blackcurrant, bay leaf, and graphite lead into a finely layered palate of dark fruits, tobacco leaf, and cedar. Polished tannins and well-integrated oak give it both presence and persistence.

Pairing: Aged ribeye with truffle jus or wild mushrooms. The wine’s depth and tension complement the richness of the beef, creating a pairing that is grounded, confident, and enduring. One that reflects both heritage and craftsmanship.
