Levantine Hill Estate exists for one reason: To produce wines of uncompromising quality and distinction. A chance meeting between founder Elias Jreissati and winemaker Paul Bridgeman saw paths cross, trajectories intersect, minds and visions interact. Their shared vision is to create the optimum expression of a cool climate wine, from each suitable vintage, without regard to vineyard location, cost or effort. The resulting wine is this Optume: The pinnacle of what we are capable of.

The result is two exceptionally rare wines; our 2017 Optume Shiraz and 2017 Optume Cabernet Sauvignon.

Our Optume wines embody the sum of our people and of our work, showcasing years of meticulous effort by our winemaker Paul Bridgeman to create a wine expressing the Yarra Valley. For the very first time, we have looked beyond the horizon of our own vineyards to pull together an assemblage of hand-sorted grapes sourced from individual Yarra Valley sites. The combination of terroirs allows for more nuanced flavours and complexity, with the outcome an outstanding new benchmark in wine.

The rarity of these wines results from the pulling together of the strengths and expressions of a small number of select grapes. Each parcel of fruit was expressly designated for predicted contributions they have towards the final blend. The
2017 vintage provided an exceptionally ideal cool and elongated growing season.

The end result is a masterpiece in wine. Each bottle is accompanied by an individually numbered key that unlocks the magnificent contents inside your wine's hand-made casing.


The 2017 growing conditions were perfect for sourcing grapes with the intention of creating a classic style of cool-climate ‘claret’. This wine features brooding restrained fruit characters of cassis and blackberry with complexing savoury elements of bramble, bergamot, sage leaf, amari, nutmeg, sandalwood, laurel, leather and star anise. Suppleness on the palate combines with flavours of red liquorice, smoked paprika, charred meats and cassia bark. The silky texture and juicy flavours intertwine on the poised youthful palate, rewarding repeat visits as the regal tannin layers accumulate on the finish.

Showing volume and weight with finesse and restraint, this Shiraz is perfumed, brooding and enticingly refined medium-bodied. Leading with an intensity of white pepper and char, the complex, slowly-evolving nose offers a mélange of mulberry, dried figs, cloves, cardamom and fruit mince pies. The palate delivers a grace and presence with the weight pushing through to a slow-building resonance of flavour and tannin. The density of black fruits is wound tight and integrated so that no one element stands above the others.
