Our Team & Our Vision

Paul Bridgeman

Head Winemaker

Paul Bridgeman

Head Winemaker

A Yarra Valley local, Paul was amazed by the quality of fruit produced by our vineyards and decided to join Levantine Hill in 2013.

By then he was already recognised as one of Australia’s leading winemakers, having spent five years as winemaker at Yarra Yering where he steered the iconic label immediately after the passing of Yarra Valley legend, Dr Bailey Carrodus.

Having dabbled in jackarooing and rock' n' roll, Paul found his true calling in the 1990s during a formative 18-months at a Washington State winery in the United States.

He has since worked a staggering 20 Yarra Valley vintages plus a few others in McLaren Vale, the Hunter Valley, the King Valley and Gascony in Southwest France.

In 2006, he fulfilled a personal dream by working at the legendary Domaine Jean-Louis Chave in France's Rhône Valley.

Levantine Hill's philosophy of pursuing quality without compromise is a perfect fit with Paul's winemaking values and his passion for small batch winemaking.

Paul sets the direction of our wines, highlighting the intricacies and unique characteristics of our two famous vineyards.

Our winemaking style allows each vine parcel to express its own voice from vintage to vintage. Our aim is to produce wines of purity, finesse and longevity, befitting our shared vision to truly produce "exceptional wines, handcrafted without compromise" and elevate Levantine Hill to the pinnacle of Australian wine production.

Cameron Joyce

Vineyard Manager

Cameron Joyce

Vineyard Manager

Cameron started his wine career in the simplest way possible – selling it.

But just selling fine wine got him interested in how it was made. Very interested. And soon selling it wasn’t enough. He wanted to play a part in making it.

That desire lead to him moving to the Upper Yarra Valley and undertaking a traineeship in viticulture. He was soon hooked.

After completing his traineeship, he worked in a number of Yarra Valley wineries, learning from the people around him and seeing how to get the best results from the different varieties of grapes being grown.

Along the way, Cameron completed a degree in horticulture and viticulture.

By the time he joined Levantine Hill, he had spent 14 years honing the craft of cool climate viticulture, perfecting ways to deal with the challenges it presents and trying to find an overall balance in the vines.

Cameron’s reasons for joining Levantine Hill were simple. It gave him the opportunity to work with a winery and team of people that was totally committed to making exceptional wine without compromise. And that was just too good to miss.

Aaron Zuccaro

Assistant Winemaker

Aaron Zuccaro

Assistant Winemaker

Aaron started his professional career as a research scientist at the University of Melbourne.

Realising the daily grind of laboratory work was not for him, he took the opportunity to help his parents at their vineyard/winery just as the transition from hobby to wine business was taking place.

That special mix of art, science and hard work drove Aaron to enrol in a Bachelor of Wine Science course to become a qualified Winemaker.

Having worked in the Yarra Valley making wine for 10 years at Chandon, Giant Steps and Yering Station, Aaron has developed a keen knowledge and passion for all things Yarra Valley and the amazing cool climate wines it produces.

Stints in California, Marlborough and Burgundy further widened Aaron’s experience and knowledge.

In early 2018, he jumped at the chance to work with iconic Yarra Valley winemaker Paul Bridgeman and help him in the pursuit of perfection at Levantine Hill.

Peter Shone

Peter Shone

Cellar Hand

Having completed a degree in Environmental Science in Ireland in 2011, Peter left to travel the world, eventually finding wine in Marlborough, New Zealand.

A vintage with Brancott Estate was followed by two at Richmond Grove in Australia’s Barossa Valley.

Falling for the allure of cool climate wines and Levantine Hill in particular, Peter joined the team for vintage in 2015. Stints in the vineyard and cellar door followed providing a broad understanding of the company as a whole.

Peter is currently enrolled in the prestigious WSET Diploma to further his knowledge of the world of wine and winemaking.
